The Love of Creation

The price may initially seem high, but when you look at how much work has gone into it, the price is minimal. We handpick from the best sites in the early hours of the morning, chill the fruit, and hand sort over a sorting table, only letting the utmost top-quality berries through to the press. We gently (very gently) inflate an airbag press to delicately squeeze the juice out and then ferment naturally in oak, with an individual winemaker monitoring the progress three times a day. We hand stir the highest quality French barrels from the Allier forest every two weeks to ensure they become rich in flavor and then bottle without fining or filtering using the highest quality French glass with a Bohemian Czech glass crystal seal. 



This requires an amazing level of attention to detail. We do this because of the love of creation. The love of creating something beautiful, different, interesting, and personable and nothing else. Alternatively, you could buy a wine for cheaper. It’s been rattled off the vine from a generic vineyard by a machine harvester, dumped into a vat by a dump truck, crushed and destemmed to maximize efficiency, harshly squeezed to maximize the yield of juice, fermented in stainless steel, fined, filtered, and put on your table for $20, three months later. There is no personality in this wine, no story, no love.


The same analogy can be given with food. You can eat generic fast food and it will fill you up. You won’t smile when you are eating, or after you finish, you will most likely feel slightly sick. It won’t be memorable or exciting, and you know the burger is the same as every other burger in the world, which doesn’t make you feel very special eating it.


Alternatively, you could have an incredible meal cooked for you by a friend or a great chef who has spent years refining the recipe, who uses the best ingredients and has prepared the food all day. I can bet you will smile when eating, smile after eating, and smile at the memory in the future. For me, it isn’t really a choice, it’s the way I want to live my life. Sometimes I eat to get full, it’s true, but there are other times I want to remember and feel special. L.A.S. Vino is made for those moments.
