A professor once informed me that hand picking didn’t alter the taste of wines, maybe only slightly. A winemaker in Napa told me that hand sorting the fruit really didn’t make a difference either, only slightly. A friend let me know that there wasn’t really a difference between hand plunging and using a big machine maybe hand plunging was slightly better but not statistically.

When we make wine at L.A.S. Vino we do all these little things, the one percenter’s , the things that don’t really change the wine much on their own (apparently), but after a while, these little things start adding up. Picking the best site, cooling the fruit to retain aroma, hand sorting, whole bunch pressing, gentle press cycle, hand plunging, stirring lees, choosing the best oak, and a plethora of other things. Slowly that 1% that didn’t really matter, accumulates to 100% and you have a wine that is completely different, unique and special. All because you took the time to really care about the final wine. For us wine isn’t just some product, its a way of life.
