A traditional dry sparkling cider. Cold pressed from 13 different varieties of real cider apples sourced from the cool hillsides of Denmark in the great southern region of Western Australia.
Apples picked and pressed Include: Browns Apple, Yarlington Mill, Improved Foxwhelp, Bramley, Alfreston, Striped Beefing, Castle Major, Somerset Red Streak, Jonagold, Dabinet, Sweet Coppin, Breakwells Seedling, Brabant Bellefeur, Sugarloaf Pippin and Brown Snout.
Fermented in aged barriques with a wild/mixed culture until dry and then bottle conditioned with no fining or filtration. This cider is naturally cloudy and will develop beautifully with age.
