We only picked a tiny amount of fruit from this special little vineyard. The grapes were all different levels of ripeness when picked; some green, some pink and some deep red but all were ripe. The fruit was chilled overnight prior to being bunch sorted and berrry sorted by hand. We then put 40% whole bunches into a singular vessel and filled it up with individual whole berries. 


We treated the wine very gently as we wanted the tannins to be expressive yet soft on the palate. It was pumped over once a day and fermented cold to retain aroma and not to be too extractive. The wine was then pressed into four barrels where it matured and softened for 10 months. Its delicate, elegant, perfumed but has beautiful structure and length. The wine was not fined (vegan friendly) and was bottled unfiltered.
