Using luck, art, and science (L.A.S.) we aim to make absolutely delicious, delectable, desirable drops and to discover new flavours in the world of wine. Based in Margaret River, Western Australia, our mantra is minimal intervention with maximum flavour and where possible we aim to work with growers using sustainable, organic and biodynamic vineyard methods. We hope you enjoy drinking the wines as much as we enjoyed making them.
'Whole Bunches and Granite rock'
Strikingly beautiful at 400m above sea level, the vineyard sits on a steep north facing slope in the middle of the Ferguson Valley. Bush vines sprawl across the bare land and remain unirrigated, with fruit sitting just above the ground.
Due to the elevation and high winds the vineyard needs minimal sprays and there are no herbicides or pesticides used. Throughout the vineyard large granite rocks punctuate the gravelly loam top soil. There isn’t a vineyard we have seen that is anything like this and the resulting wine expression of that.
We put whole bunches into a small fermenter and topped it with whole berries. The berries and bunches were fermented cold and treated gently, with minimal handling in the cellar. It matured in four barriques for 10 months and was bottled with no fining or filtration.
Tastes like fresh red berries and flowers Elegant complexity in a bottle.
2019 ALBINO PNO
'Strawberries and Cream'
Pinot Noir and Chardonnay with different amounts of co-fermentation, whole bunch pressing and skin contact blended together as one.
The colour of an autumn sunset, every shade of orange and pink. The smell of strawberries and roses fresh from Nonnas garden. Buttered popcorn and watermelon on the table too. The taste of the sea; refreshing and alive. The most complex, flavoursome rendition of the Albino PNO to date.
An illuminating wine for dark and troubled times.Light up the darkness and feel alive.
Tastes like a long summers night.
'Chenin Blanc (bio)Dynamic Blend'
A certified organic and biodynamic site at the northern end of the cape. The vineyard is completely unkept and unpruned with no trellising. The vines sprawl everywhere and pigs, geese, guineafowl and cows roam free.
The site faces north with a little creek running through the middle of the vineyard. Native flowers and plants grow under the rows with no herbicides or pesticides sprayed.
The fruit was hand picked, sorted, whole bunch pressed and under went a natural fermentation in clay and oak. It rested in these vessels for 10 months before being bottled with no fining or filtration.
Tastes like pink grapefruit and pavlova.
'Biodynamic berries soaking on skins for 365 days around the sun'
Biodynamic/Organic fruit from a beautiful vineyard at the northern end of the cape. For the previous few years the vineyard had been completely unkept and unpruned with no trellising. The vines sprawl everywhere where pigs, geese, guineafowl and cows roam free. The site faces north with a little creek running through the middle of the vineyard. Native flowers and plants grow under the rows with no herbicides or pesticides sprayed.
We wanted to create a truly unique Cabernet. To this effect we hand picked and berry sorted the fruit prior to maturing the wine as skins, berries and bunches for 365 days in barrique. This has led to an incredible richness, complexity and flavour in the resulting wine.
Dark rich fruits, mulberry, dark cherry and plum with secondary savoury notes of prune, baking spices and clove. Layers and layers of silky tannin. A wine that can be put down and comes into its own by decanting A Cabernet without comparison in Margaret River.
*Made from certified organic / biodynamic grapes.
